Extremamente aerado, leve, parece uma nuvem! E agora junto com um dos sabores que eu tamb\u00e9m aprecio bastante: matcha.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-6593 jetpack-lazy-image jetpack-lazy-image--handled\" src=\"https:\/\/i2.wp.com\/pratofundo.com\/wp-content\/uploads\/receita-bolo-chiffon-matcha003.jpg?resize=700%2C500&amp;quality=85&amp;strip=all&amp;ssl=1\" alt=\"Bolo Chiffon Cake de Matcha e Merengue Su\u00ed\u00e7o\" width=\"700\" height=\"500\" data-recalc-dims=\"1\" data-lazy-loaded=\"1\" \/><\/p>\n<p>Apesar de gostar bastante, n\u00e3o d\u00e1 para fazer sempre\u2026 digamos que vai uma quantidade interessante de ovos e afins. Mas que valem toda a pena! Ent\u00e3o, a gente acaba fazendo para ocasi\u00f5es especiais.<\/p>\n<p>E desta vez, fiz para mim mesmo. Como mais um dia 5 de maio chegou e com ele,\u00a0<strong>meu anivers\u00e1rio<\/strong>\u00a0(t\u00f4 ficando mais velho, oh tristeza! *<a href=\"http:\/\/giphy.com\/gifs\/CtfAlkDhebZN6\/html5\" target=\"_blank\" rel=\"nofollow noopener\">escorre uma l\u00e1grima<\/a>*), pelo menos tem bolo, n\u00e9?<\/p>\n<p>Aqui no PF tem outros sabores de chiffon tamb\u00e9m, as receitas s\u00e3o bem similares. Mas sempre acabo modificando alguma coisa para melhorar a formula\u00e7\u00e3o final. Nesta daqui n\u00e3o foi diferente, pois o bolo tinha que ficar verde. E n\u00e3o coloquei corante adicional, hein!<\/p>\n<p>Dependendo da receita, muitos bolos de matcha n\u00e3o ficam verde depois de assados. A grande maioria fica marrom ou foi colocado corante. Por\u00e9m, a Ci\u00eancia est\u00e1 ao nosso lado! Controlando apenas o pH da massa \u00e9 poss\u00edvel contornar, em parte, esse problema na cor.<\/p>\n<p>Para quem se interessar, provavelmente a mudan\u00e7a de cor ocorre por dois motivos b\u00e1sicos: escurecimento enzim\u00e1tico (e forma\u00e7\u00e3o n\u00e3o-enzim\u00e1tica de pigmentos escuros), degrada\u00e7\u00e3o da clorofila. E o ch\u00e1 possui em quantidades estes dois fatores, a cor verde caracter\u00edstica do matcha \u00e9 devido a clorofila.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-6595 jetpack-lazy-image jetpack-lazy-image--handled\" src=\"https:\/\/i1.wp.com\/pratofundo.com\/wp-content\/uploads\/receita-bolo-chiffon-matcha002.jpg?resize=700%2C928&amp;quality=85&amp;strip=all&amp;ssl=1\" alt=\"Bolo Chiffon Cake de Matcha e Merengue Su\u00ed\u00e7o\" width=\"700\" height=\"928\" data-recalc-dims=\"1\" data-lazy-loaded=\"1\" \/><\/p>\n<p>A alterna\u00e7\u00e3o nos dois casos, mas o interesse fica no escurecimento enzim\u00e1tico inibindo a a\u00e7\u00e3o das enzimas, o que j\u00e1 ajuda. Na clorofila atua tamb\u00e9m, s\u00f3 que contribu\u00ed na degrada\u00e7\u00e3o junto com o calor do forno.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-6597 jetpack-lazy-image jetpack-lazy-image--handled\" src=\"https:\/\/i1.wp.com\/pratofundo.com\/wp-content\/uploads\/receita-bolo-chiffon-matcha001-2.jpg?resize=700%2C700&amp;quality=85&amp;strip=all&amp;ssl=1\" alt=\"Match\u00e1 e suas varia\u00e7\u00f5es no pH da massada\" width=\"700\" height=\"700\" data-recalc-dims=\"1\" data-lazy-loaded=\"1\" \/><\/p>\n<p>Antes de fazer o chiffon de verdade, fiz alguns testes com uma mesma massa de bolo. Apenas alterando o pH da massa para ver os resultados. Por isso, a receita pede um pouco mais de cremor de t\u00e1rtaro (bitartarato de pot\u00e1ssio). Ele \u00e9 um sal com car\u00e1ter \u00e1cido, normalmente \u00e9 usado para melhorar a estabilidade das claras e agora atua tamb\u00e9m na cor.<\/p>\n<p>Fiz o bolo previamente para postar no futuro, meio\u00a0<a href=\"https:\/\/youtu.be\/cwdbLu_x0gY?t=57s\" target=\"_blank\" rel=\"nofollow noopener\">wibbly wobbly<\/a>\u00a0sabe como \u00e9 que \u00e9. Logo, n\u00e3o ganhei nenhum parab\u00e9ns, nem bolo, nem presente. Oh, coitado! hahahah<\/p>\n<p>Geralmente, chiffon cake n\u00e3o tem cobertura. Bateu aquela vontade de usar o ma\u00e7arico, ent\u00e3o, taquei um merengue su\u00ed\u00e7o para dar aquela tostada. A f\u00f4rma de forma de chiffon cake (\u00d8: 25cm) n\u00e3o deve ser untada.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Junte todos os ingredientes do grupo A e peneirar 3 vezes. Reserve.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Bater gemas e a\u00e7\u00facar cristal at\u00e9 creme p\u00e1lido e aerado. Acrescentar \u00e1gua, continue batendo.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Adicionar o \u00f3leo ao poucos sem parar de bater. Reserve.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Bater as claras em neve, comece em baixa velocidade. Quando come\u00e7ar a espumar (1-2 minutos) adicione cremor de t\u00e1rtaro, bater por 2 minutos.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Acrescente metade do a\u00e7\u00facar, bater por 3 minutos. Adicionar o restante.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Aumentar a velocidade para m\u00e9dia-alta. As claras em neve devem ficar em picos firmes, demora cerca 6-7 minutos (batedeira planet\u00e1ria).<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Enquanto isso, acrescente Grupo A (secos) ao creme de gemas e misture bem. Ideal que seja numa batedeira, mas pode ser feito com fouet.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Adicione 1\/3 das claras em neves ao creme de gemas e farinha. Misturar muito bem at\u00e9 ficar homog\u00eaneo. Ent\u00e3o, verta esta mistura sobre as claras em neves.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Mexer com movimentos r\u00e1pidos, mas delicados at\u00e9 ficar homog\u00eaneo. Transfira para a f\u00f4rma de chiffon (N\u00c3O unte a f\u00f4rma) e nivelar bem.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Assar a 180\u00baC por 50-55, fazer o teste do palito.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Remover do forno e inverter sobre o contra-cone. Deixar esfriar por 06 horas (m\u00ednimo) antes de desenformar.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Para desenformar, passar uma faca ou esp\u00e1tula bem fina por toda a borda da f\u00f4rma raspando bem o metal. Remover o anel da f\u00f4rma com cuidado. O mesmo processo para remover a base.<\/div>\n<\/li>\n<\/ol>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<div class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name\">MERENGUE SU\u00cd\u00c7O<\/div>\n<ol class=\"wprm-recipe-instructions\">\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Num panela bem limpa misturar claras e a\u00e7\u00facar.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Levar ao fogo baixo, mexer para dissolver o a\u00e7\u00facar. Esta etapa \u00e9 feita, tradicionalmente, em banho-maria.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Teste com os dedos para sentir se o a\u00e7\u00facar j\u00e1 dissolveu. A consist\u00eancia das claras mudam, ficam mais l\u00edquidas.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Transfira para a tigela da batedeira, adicione cremor de t\u00e1rtaro.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Bater bem at\u00e9 ficar com picos firmes (batedor arame), cerca de 7-8 minutos, dependendo da pot\u00eancia do seu equipamento.<\/div>\n<\/li>\n<\/ol>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<div class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name\">MONTAGEM<\/div>\n<ol class=\"wprm-recipe-instructions\">\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Ap\u00f3s desenformar o bolo, cobrir com o merengue com cuidado. O bolo solta bastante migalha.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">O efeito desejado \u00e9 bem abstrato, use uma esp\u00e1tula off-set ou colher. Hoje em dia \u00e9 mais f\u00e1cil de encontrar e recomendo usar. D\u00e1 para fazer sem, mas particularmente senti diferen\u00e7a na textura.
